Potatoes - 1 kilo/2,205 pounds

water one big spoon soup ["concha" is literally "shell" due to the shape")]

[Spanish] Galician [variant] cabbage - q.b. [short for "quanto baste", as much suffices]

olive oil - q.b. [short for "quanto baste", as much suffices]

salt - [any amount wanted?]

spicy sausage - 1

One puts to the fire the peeled potatoes with water, the salt and the spicy sausage. When they boil it unravel themselves the potatoes quite well and join back to the broth.

One holds the «Galician» cabbages cut very very thin, by hand or proper machine, and are cast unto big boiling blaze, to cease not of boiling.

It is cast a good throw of olive-oil, it are rectified the seasonings and it is left boiling with the pot uncovered, till the cabbages boil (never too much). It is served immediately."
